The uniqueness of this particular sparkling wine obtained with black vernaccia grapes is due to the vinification method, with three successive fermentations.
The must of the grapes, dried for three months, is added to the October wine in a quantity equal to 60%. The third fermentation of foam with method Martinotti- Charmat along, gives in the mouth a surprising aromatic complexity.

Rosé sparkling wine produced according to the Charmat method from Pinot Noir grapes.
Grape variety: Pinot Nero.
Harvesting period: first week of August.
Harvesting method: hand-picked in small crates.
Vinification: carbonic skin maceration of the grapes directly in the press for one day, soft pressing of the whole bunches.
Fermentation at controlled temperature in steel.
Aging: 4 months in steel vats and 3 months in the bottle.
