Ingredients: Pasteurized sheep's milk, salt, rennet.

Soft aged pecorino, made with sheep's milk. After a first half-seasoning of about 3 months in the dairy, the cheese is transferred to the tuff caves of Sant'Agata Feltria where it undergoes aging in a humid and natural environment, which allows slow fermentation and a natural loss of fat.

Thanks to the particularly favorable environment for maturing, despite the minimum maturation of 12 months, the product maintains a soft texture and strong flavor.
